I learned that when wheat grains are milled to make white flour, a lot of important nutrients are lost. Specifically, white flour has 50% to 85% less of vitamins like B and E, and minerals like calcium, iron, potassium, chromium, phosphorus, zinc, magnesium, manganese, and cobalt. This shows why it's better to choose whole grain products because they keep more of these essential nutrients, leading to a healthier diet.
